Check out the tray liners at Martina, Danny Meyer’s new pizzeria in the East Village, which were designed as branded Instagram bait. Each has what the executive chef, Nick Anderer, calls “a frenetic doodle” of contemporary Roman slang phrases, images of wineglasses and pizza, and at the bottom left, the restaurant’s name.

And if you wonder why your Instagram shots of Martina’s pies look so good, credit the lighting system, which allows the staff to adjust bulbs individually, with “a warmer hue in the dining room than in the kitchen,” Mr. Anderer said, “so it doesn’t cast too much shade against the pizza.”

Almost two miles and a degree of insecurity to the south, the chef Gerardo Gonzalez relies on Instagram to sustain his first restaurant, Lalito, which he opened 10 months ago in Chinatown. He said a lunch special sells out immediately if he posts an Instagram photo of the new dish.

Seven years after its founding, Instagram announced last week that it has 800 million monthly users, and the camera-ready restaurant dish has become a cultural commonplace. High-quality images are as essential to a chef’s success these days as knife skills.

The people who teach those knife skills know it — which is why the venerable Culinary Institute of America will introduce two new elective courses in May, one in food photography and the other in food styling, to help students develop sophisticated skills not only for the plate but also for the app.

The classes will teach students how to work with digital cameras and lighting, how to compose and edit a shot, and how to cook for the still camera, “with the same values as if you were eating it, evoking the feeling that it’s going to be luscious,” said Kersti Bowser, a food stylist and institute alumna who is working to develop the courses with Phil Mansfield, a staff photographer at the school.

They hope to replace the excess they see on social media, with photos that communicate flavor. Ms. Bowser thinks people are becoming “numb to the shock value” of much of what they see. “It seems so fabulous, much of it,” she said. “I want food to keep its integrity.”

Students may start out with the same raw ingredients they use in cooking class, but the rules are different in the photo class: They may want to undercook chicken or fish to keep the skin from looking tired, and vegetables may be burned on purpose to better convey texture.

The students see proof every day of how important visuals have become. Jason Potanovich, an assistant professor and the executive chef at the institute’s showcase Bocuse Restaurant, monitors diners’ reactions from his glass-walled kitchen, as do the students who work there. Bocuse serves steak tartare on a small plate over a moat of herb tea, fresh herbs and dry ice, and the swirling cloud that surrounds the dish inspires many customers to reach for their phones before they reach for their forks.

A photogenic dish, Mr. Potanovich said, is “absolutely” likelier to stay on the menu.

But there’s another reason for the new classes: The goal of becoming a restaurant chef and owner is increasingly elusive, thanks to competition for top jobs and a stagnant restaurant market. So schools like the culinary institute hope to prepare their students for a broader range of careers. In the current job market, an expanded skill set can make the difference between being employed and still looking.

“We see a small but steady increased interest in careers specifically in beverages and wine, food education, nutrition and wellness, food media,” said Denise Bauer, dean of the institute’s three-year-old School of Liberal Arts and Food Studies. Students “want to prepare for a food career that might not focus on food service alone,” she said, but could also involve the creation of photos for a variety of businesses, from restaurants to media outlets to cookbooks.

Mr. Mansfield stressed that the photo and styling classes would not be Instagram-for-credit; real food photography requires many more skills and thoughtful judgment calls. The photographer has to decide how to position a pot of ratatouille in a shot, what bowls and utensils to use and which napkin evokes a rustic feel.

In one recent class-development session in the school’s photography studio, Mr. Mansfield tried a test shot, checked his computer monitor, adjusted the lighting equipment, tried again and still wasn’t satisfied. Ms. Bowser moved in with tweezers to rearrange some of the vegetables — which she had cooked one ingredient at a time, rather than as a stew, to get them ready for their close-up.

The institute is not the only culinary school thinking visually. At Johnson & Wales University’s main campus in Providence, RI, about 70 culinary arts students belong to a faculty-advised food photography club, and many keep digital portfolios during their four years at school.

“Our students have coined the term ‘plate-y,’ as in, ‘I’m taking a plate-y,’” said Susan Marshall, interim dean of the university’s College of Culinary Arts. “They’re proud of their work and want to share it,” which they do on the school’s multiple Instagram and Facebook accounts. Students can take an elective food-photography course through three other colleges within the university.

The Institute of Culinary Education, in Lower Manhattan, offers food photography and styling electives, said Michael Laiskonis, the school’s creative director and a former pastry chef at Le Bernardin. He estimates that “maybe only half” of the students he encounters aspire to a career in restaurant kitchens, and he anticipates more curriculum changes in the next five to 10 years to reflect that.

But for the die-hards who intend to open restaurants, mastering images is imperative — even if the definition of mastery is a moving target.

Mr. Gonzalez admits to being tired of the Instagram photo feed because, he said, “just food can get boring.” He thinks that the key to his restaurant’s survival is the Instagram Story, either photo or video, that disappears after 24 hours and encourages people to take a look more often.

He uses the feed like a bulletin board, to announce daily specials and events, but he also relies on the stories to provide a “visual cue” about Lalito’s personality by showing the scene inside the restaurant.

“The stories are not ‘here’s how to plate a dish,’ but ‘the people here are amazing,’” he said. “I understand that photography drives traffic, but I’m interested in having people feel part of something. I want to build regulars.”

Football Star David Beckham Hails Knighthood as ‘Proudest Moment’

Former England football captain David Beckham on Tuesday received his knighthood from King Charles III at Windsor Castle, calling it his "proudest moment".

The football star, 50, who played 115 times for England as well as for some of the world's most high-profile clubs including Manchester United and Real Madrid, was knighted for services to sport and charity.

Beckham said it was "quite a moment" for a boy from the east end of London to be "here at Windsor Castle, being honored by His Majesty the King –- the most important and the most respected institution in the world".

"This is without doubt my proudest moment," he told the PA news agency.

Beckham, known as a stylish dresser, wore a grey suit made by his pop star-turned fashion designer wife Victoria.

She accompanied him to the ceremony at Windsor, west of London, along with his parents Ted and Sandra.

Beckham has been known as "Sir David" since the honor was announced in June while Victoria, a former member of the Spice Girls, became "Lady Beckham".

Asked whether he managed to speak to Charles during the ceremony, Beckham said Charles had been "quite impressed with my suit".

"He's kind of the most elegantly dressed man that I know, so he inspired quite a few of my looks over the years and he definitely inspired this look.

"I looked at old pictures of him when he was quite young in morning suits and I was like, OK, that’s what I want to wear, so I gave it to my wife and she did it," he added.

Beckham added that receiving the honor was particularly special for him as he had "always been a huge fan of the monarchy".

"I've been very obviously lucky in my career to have won what I've won and done what I've done but to receive an honor like this, of a knight, is beyond anything that I ever thought that I would receive," he said.

Beckham's knighthood is the culmination of years of tireless efforts to transcend football and turn himself into a global icon at the intersection of sport, fashion and business.

He was believed to have been on the verge of receiving a knighthood after helping London win its bid to host the 2012 Olympic Games.

But UK authorities placed a red flag on his nomination due to his involvement in an alleged tax avoidance scheme, according to previous reports. He was subsequently cleared.

Armed with his camera, Oscar-winning Palestinian filmmaker Basel Adra has spent years in the occupied West Bank documenting what he describes as the impunity Israelis enjoy in their mistreatment of Palestinians.

From his terrace, he points to the nearby Israeli settlement of Maon, just a short distance away. The view appears calm, but he said incidents involving settlers and Israeli soldiers take place almost daily, AFP reported.

The situation has only worsened since the start of the war in Gaza in October 2023, said Adra, the co-director of "No Other Land," a documentary he made with Israeli filmmaker Yuval Abraham that this year won an Academy award.

"The world allows Israelis -- and gives them the impunity -- to commit crimes," the 29-year-old filmmaker told AFP at his home in the village of At Tuwani.

In the nine months after accepting his Oscar in Hollywood, Adra has given score of interviews and captured hundreds of videos capturing settler violence allegedly carried out under army protection.

"Dozens of Palestinian communities, villagers fled from their homes in this time due to the settler and occupation forces violence and attacks and killings," Adra said.

Taking a team of AFP journalists on a tour to illustrate the difficulties of life for Palestinians in the West Bank, Adra headed to the nearby Bedouin village of Umm al-Khair.

To reach it, one must pass an Israeli settlement.

On a wall, an inscription in Arabic warns: "No future for Palestine."

Since the war in Gaza began with Hamas's October 2023 attack on Israel, settler and army attacks in the West Bank have killed around 1,000 Palestinians, according to the Palestinian health ministry in Ramallah.

During the same period, Palestinian attacks in the same region have killed at least 43 Israelis, including soldiers, according to official Israeli figures.

Even the presence of international and Israeli activists, intended to deter violence, has done little to change reality for Palestinians in the West Bank.

Adra recalled the killing of a close friend, fellow activist Awdah Hathaleen, on July 28.

Hathaleen, he said, was filming "settlers with a bulldozer going through his family land, destroying their olive trees and fence".

His death, widely filmed by other activists and reported in the media, prompted Israeli police to open an investigation, though they did not classify it as murder.

"A couple of days after this criminal settler committed these crimes, he was allowed to come again to the same place, to continue digging the same land," Adra said.

The young filmmaker, who displayed the Oscar statue, has also been targeted.

"I've been arrested several times by the army," Adra said.

"Once, settlers came onto our land, they started pushing us, throwing stones. They had sticks, and one of them had a gun. Two of my brothers were slightly injured."

"We called the police. They arrived, but the attack continued while they watched."

The military said it had received reports that "several terrorists" had hurled rocks at Israeli civilians near At Tuwani injuring two of them.

"Upon receiving the report, the security forces were dispatched to the scene, conducted searches in the area and questioned suspects," the military told AFP.

Adra said that in Masafer Yatta, the cluster of villages that includes At Tuwani, settler activity is unrelenting.

"They keep building settlements and illegal outposts 24 hours a day, seven days a week," he said.

After a long legal battle, the Supreme Court ruled in favor of the army in 2022, paving the way for the eviction of residents from eight Palestinian villages in the area.

In the village of Umm al-Khair, a few concrete houses are surrounded by settler structures -- mobile homes flying Israeli flags and permanent structures encircling the Bedouins.

At his desk, community leader Khalil Hathaleen -- brother of the slain activist -- spreads out 14 demolition orders received on October 28.

According to army documents in Hebrew and Arabic, residents have 14 days to appeal.

"Even if the entire village is demolished, we will stay on this land and we will not leave," Hathaleen said.

"Because there is nowhere else to go."

Like other communities in the area, the approximately 200 residents of Umm al-Khair are descendants of Bedouins expelled from the Negev desert in southern Israel in the early 1950s.

About three million Palestinians live in the West Bank, which Israel has occupied since 1967. Some 500,000 Israelis live there in settlements deemed illegal under international law.

At the end of October, the Israeli parliament voted to advance two far-right-backed bills calling for annexation of the territory.

"Growing up, I believed very much in international law," Adra said.

"I believe that the materials that I'm filming, the documentation, when they are seen abroad, somebody is going to do something."

Star-Eating Black Hole Unleashes Record-Setting Energetic Flare

Scientists are observing the most energetic flare ever seen emanating from a supermassive black hole, apparently caused when this celestial beast shredded and swallowed a huge star that strayed too close.

The researchers said the flare at its peak was 10 trillion times brighter than the sun. It was unleashed by a black hole roughly 300 million times the mass of the sun residing inside a faraway galaxy, about 11 billion light-years from Earth. A light-year is the distance light travels in a year, 5.9 trillion miles (9.5 trillion km).

Black holes are extraordinarily dense objects with gravitational pull so strong that not even light can escape. Most galaxies are thought to have one at their center. The black hole in this research is extremely massive - more so, for instance, than the one at the center of our Milky Way that possesses roughly 4 million times the mass of the sun.

The researchers said the most likely explanation for the flare is a large star being pulled into the black hole. As material from the ill-fated star falls inward, it causes a flare of energy when it reaches the black hole's point of no return.

The researchers believe the star was at least 30 times, and perhaps up to 200 times, the mass of the sun. It may have been part of a population of stars orbiting in the vicinity of the black hole and somehow was sent too close through some interaction with another object in the neighborhood, the researchers said.

"It seems reasonable that it was involved in a collision with another more massive body in its original orbit around the supermassive black hole which essentially knocked it in," said Caltech astronomer Matthew Graham, lead author of the study published on Tuesday in the journal Nature Astronomy.

"It was put on a much more elliptical orbit, which brought it much closer to the supermassive black hole at its closest pass - too close, it turns out," Graham added.

Supermassive black holes are surrounded by a disk of gas and dust being drawn inward after being caught by their gravitational strength.

"However it happened, the star wandered close enough to the supermassive black hole that it was 'spaghettified' - that is, stretched out to become long and thin, due to the gravity of the supermassive black hole strengthening as you get very close to it. That material then spiraled around the supermassive black hole as it fell in," said astronomer and study co-author K.E. Saavik Ford of City University of New York Borough of Manhattan Community College and Graduate Center.

The flare would be the result of the gas from the shredded star heating up and shining as it falls into oblivion.

The star thought to be involved was unusually massive.

"Stars this massive are spectacularly rare both because smaller stars are born more often than massive ones, and because very massive stars live very short lives," Ford said.

The researchers suspect that stars that orbit near a supermassive black hole can increase in mass by attracting some of the material swirling around the black hole, making them abnormally large.

The researchers observed the flare using telescopes in California, Arizona and Hawaii. They considered other possible causes such as a star exploding at the end of its lifetime, a jet of material streaming outward from the black hole or a phenomenon called gravitational lensing that could have made a fainter event look more powerful. None of these scenarios fit the data.

Because of the time it takes for light to travel, when astronomers observe faraway events like this they are looking back in time to an earlier epoch of the universe.

The flare brightened by a factor of 40 during the observations, apparently as more and more material from the star fell into the black hole, and peaked in June 2018. It was 30 times more luminous than any previously observed black hole flare. It is still ongoing but diminishing in luminosity, with the entire process expected to take about 11 years to complete.

"The flare is still fading," Graham said.
